TASTING NOTE

Pale straw in colour. Rich scents of pear blossom, lime, elderflower, and candied fruits lift from the glass, followed by a textural, lees-y and savoury palate displaying lime, bitter almond and saline perfectly balanced with gentle acidity.

WINEMAKING

Riesling was pressed straight after picking, settled overnight, and racked to egg-shaped fermenter to undergo wild fermentation with indigenous yeasts. The shape of the egg created a natural vortex for the yeast, aided by daily batonnage (lees stirring). It developed a distinctive creamy, cheesy texture on full lees for partial malolactic fermentation, to build further depth to the wine.

SERVING SUGGESTIONS

Serve chilled with de-boned quail marinated in verjuice, olive oil and fresh grapes cooked over a flame grill and eaten off the bone with your fingers.
